Ingredients:

1. 1 1/4 c walnuts
2. 3/4 c Sugar
3. 3/4 tsp Baking soda
4. 1/2 tsp Salt
5. 1 tsp Vanilla extract
6. 2 c unbleached all-purpose flour
7. 1 1/2 c Overripe Bananas
8. 1/4 c Plain yogurt
9. 2 eggs,
10. 3 ozs unsalted butter
Dirctions:
Step 1
- Position oven rack to the lower-middle position and preheat oven to 350° F.
- Grease bottom & sides of a 9- by 5-inch loaf pan; dust with flour, tapping out excess flour.
- Spread walnuts evenly on a baking sheet and toast until fragrant, about 5-10 mins.
- Setting aside to cool.
- In a big bowl, whisk together the flour, baking soda, sugar, walnuts, & salt.
- Set aside until needed.
- In a medium bowl, using a wooden spoon, mix together the mashed bananas, vanilla, butter, eggs, & yogurt.
- Lightly fold the banana mixture into the dry ingredients with a spatula until just combined & the batter looks thick & chunky.
- Scrape the batter into the prepared loaf pan.
- Bake at 350° for 55-60 mins or until loaf is golden brown & a toothpick inserted in the center comes out clean.
- Let cool in the pan for 5 mins, then transfer to a wire rack. Serve warm or at room temperature.
- This recipe makes one 9-inch loaf.
