Broccoli-Cheese Omlate Recipe2 Servings
1/2 c Cabbage
1 c Egg Substitute
1 c Broccoli
1 c Broccoli  Cole Slaw
*** Non-stick pan spray***
1/4 c Salsa
2 ounces Low Fat Cheddar Cheese
1/4 c Cilantro
1/2 c Tomato

  • If you're working with whole broccoli separate the flowers from the stems. 
  • Peel the thicker portion of the stem & shred the tender insides finely. 
  • I buy bags of flowers & shredded "Broccoli Slaw" to save a lot of time. 
  • The slaw also has cabbage & carrot shreds in it.
  • Steam the Broccoli Flowers for about 3 mins then add the shredded cabbage & Broccoli slaw.
  •  Then steam another 1 minute. 
  • You don't want it completely cooked, just softened. 
  • Chop the flowers up into small chunks. 
  • Remove from heat and set aside.
  • In an omelet pan place 1/4 cup amounts of egg & cook up to done (but not hard). repeat up to you hace 4 egg "patties". 
  • Set 1 egg pattie on each plate & top with a slice of cheese & about 1/2 cup of the broccoli mixture. 
  • Add a some more broccoli & second egg pattie. 
  • Top with chopped tomato & a dollop of salsa. 
  • Garnish with some cilantro.
  • Serve immediately accompanied by multi-grain toast or other healthy bread.

Green Leaf, Pear, and Goat Cheese Salad Recipe

green Leaf, Pear, and Goat Cheese Salad Recipe
4 Servings
3 tbspExtra-virgin olive oil
1/3 cup Walnuts
1 tbsp Fresh Lemon juice
1 3/4 pound head Green leaf lettuce,
1/2 Bosc Pear,
3 ounces Plain, reduced-fat soft Goat Cheese
Salt and freshly ground black pepper

  • Preeat oven or toaster oven to 275° F. 
  • Spread walnuts on a baking tray and bake until fragrant and lightly browned, about 10 mins.
  •  Roughly chop nuts.
  •  Place lemon juice, oil, & a pinch of pepper  & salt  in a jar with a lid. 
  • Close tightly and shake vigorously to combine.
  • Place lettuce and pear slices in a mixing bowl. 
  • Season with pepper & salt , add dressing, & Stir. 
  • Divide among plates, sprinkle cheese & nuts on top, & serve.
  • Makes 4 (3-cup) servings

Appetizer Recipe: Pumpkin Pie Dip

(c= cup)

1. 2 c Confectioners Sugar
2. 8 oz. Cream cheese
3. 0.5 tsp Ground ginger
4. 15 oz. Canned pumpkin
5. 1 tsp Ground cinnamon

  • It is very important to make sure your cream cheese is completely softened before starting this recipe.
  •  In an electric mixer, beat the softened sugar & cream cheese.
  •  Afterwards add  ginger, pumpkin & cinnamon. 
  • Scrape down bowl to ensure all ingredients are mixed thoroughly. 
  • Mix 1 more min to mix completely. 
  • Serve in a small bowl with apple slices, pear slices or/and ginger snap cookies for dipping.

Appetizer Recipe: Fabulous Cheese Fondue

1. 4 drops hot pepper sauce
2. 1/4 cup chopped onion
3. 2 cloves garlic
4. 1 tablespoon margarine
5. 1 tablespoon all-purpose flour
6. 1/2 cup dry white wine
7. 1/4 cup reduced-fat milk
8. 8 ounces shredded cheddar cheese
9. 8 ounces Gruyere cheese
10. 2 ounces Blue cheese
11. 1/2 teaspoon red pepper flakes
  • Combine all ingredients in the stoneware crock pot. 
  • Cover cook on Low 2-2 30 mins, stirring once or twice, up to cheese is melted & smooth.

Appertizer Recipe: Prosciutto & Wraps with Fresh Goat Cheese


2 tablespoons. Fig jell
4 oz. Goat Cheese
6 slices Prosciutto


Step 1
  • Place thin sliced   prosciutto side by side, overlapping little on a sheet of parchment paper.
Step 2
  • Spread fig jell over the entire length of the sliced prosciutto. 
Step 3
  • Cut the Fresh Goat Cheese Log lengthways into four pieces.
Step 4
  • Place the pieces of Goat Cheese Log on the fig jell.
Step 5
  • Roll the prosciutto around the Goat Cheese Log & place in the refrigerator for 60 minutes.
Step 6
  • With a very sharp knife cut the prepared log into ½ inch pieces & arrange on a serving platter.

Appertizer Recipe: Olive Cheese Balls


1 c Flour
1/2 pound sharp cheddar
1 stick margarine or butter
1 jar green olives
1 teaspoon cayenne

1. 3 tbs honey
2. 36 slices baguette bread
3. 2 cups (8 ounces) Gorgonzola
4. 1 ounce (0.25 cup) extra-virgin olive oil


Step 1
  • Preheat the oven to 400  °F.
Step 2
  • Arrange the sliced baguette on a baking sheet.
  • Brush with olive oil.
  • Grill until the bread is pale golden and crisp, about 10 min..
Step 3
  • Set the cheese on the toasts and grill until the cheese is melted, about 3 min
Step 4
  • Drizzle the toasts with honey.
  • Place on a serving platter and serve immediately.
