Green Salad with Cranberry Vinaigrette

Ingredients:
1. 3 tbsp red wine vinegar
2. 1/3 cup olive oil
3. 1 pound mixed salad greens
4. 1 cup sliced almonds
5. 1/4 cup fresh cranberries
6. 1 tbsp Dijon mustard
7. 1/2 tsp minced garlic
8. 1/2 tsp salt
9. 1/2 tsp ground black pepper
10. 2 tbsp water
11. 1/2 red onion
12. 4 ounces crumbled blue cheese

Directions:

  • Heat oven to 375 ° F.  (190 degrees C). 
  • Arrange almonds in a single layer on a baking sheet. 
  • Toast in oven for 5 mins, or up to nuts begin to brown.
  • In a blender or food processor, combine the oil, vinegar, cranberries, garlic,cmustard,  pepper, salt, & water. 
  • Process up to smooth.
  • In a  bowl, stir the onion, almonds, blue cheese, & greens with the vinegar mixture up to evenly coated.
