My Favorite Meatballs
2 lb ground mild italian sausage
1/2 cup white onion (chopped finely)
6 clove garlic (minced)
6 tbsp italian bread crumbs
1/2 cup mozzarella (shredded)
2 pinch salt & pepper
1/2 cup olive oil
  1. In medium bowl, combine first 6 ingredients.
  2. Shape meat into balls (slighlty small than a golfball)
  3. Preheat olive oil in medium skillet over medium-high heat.
  4. Add meatballs
  5. Fry meatball for 15 mins (turning every 2 mins and constantly spooning oil top) or until fully cooked.
  6. Drain on paper towels
  7. I like mine in vodka suuce with linguin.
Cujun Salmon Recipe

2  salmon fillet or steak
For the Seasonings
2 dash cayenne pepper
2 dash thyme
1/2 tsp salt
4 dash black pepper
1/2 tsp granulated garlic
1/2 tsp paprika
1/2 tsp chili powder
1/2 tsp cajun seasoning
For the other ingredients
2 small lemon-freshly squeezed
2 tbsp melted butter
  1. Heat oven to 400 deg F.
  2. Rinse and pat dry salmon fillet/steak.
  3. In small bowl, mix melted butter and lemon juice.
  4. In another small bowl, mix all spices until well combined.
  5. Dip salmon in the butter and lemon then nonstick cooking spray. Sear salmon over medium to high for 2 up to 3 mins each side.
  6. Tranfer pan from stove to oven and cook another 8-10 mins until salmon flakes easily.
  7. Garnish with lemons and favorite sides.
