My Favorite Meatballs Recipe

My Favorite Meatballs
2 lb ground mild italian sausage
1/2 cup white onion (chopped finely)
6 clove garlic (minced)
6 tbsp italian bread crumbs
1/2 cup mozzarella (shredded)
2 pinch salt & pepper
1/2 cup olive oil
  1. In medium bowl, combine first 6 ingredients.
  2. Shape meat into balls (slighlty small than a golfball)
  3. Preheat olive oil in medium skillet over medium-high heat.
  4. Add meatballs
  5. Fry meatball for 15 mins (turning every 2 mins and constantly spooning oil top) or until fully cooked.
  6. Drain on paper towels
  7. I like mine in vodka suuce with linguin.
Cujun Salmon Recipe

2  salmon fillet or steak
For the Seasonings
2 dash cayenne pepper
2 dash thyme
1/2 tsp salt
4 dash black pepper
1/2 tsp granulated garlic
1/2 tsp paprika
1/2 tsp chili powder
1/2 tsp cajun seasoning
For the other ingredients
2 small lemon-freshly squeezed
2 tbsp melted butter
  1. Heat oven to 400 deg F.
  2. Rinse and pat dry salmon fillet/steak.
  3. In small bowl, mix melted butter and lemon juice.
  4. In another small bowl, mix all spices until well combined.
  5. Dip salmon in the butter and lemon then nonstick cooking spray. Sear salmon over medium to high for 2 up to 3 mins each side.
  6. Tranfer pan from stove to oven and cook another 8-10 mins until salmon flakes easily.
  7. Garnish with lemons and favorite sides.

 Chicken Quesadillas
2 Servings
4 large flour tortillas, 98% fat free
1/2 tbsp chipotle hot sauce
6 oz cooked chicken breast halves
1 1/2 cup shredded cheddar cheese, nonfat


Chiken Broccoli Casserole
2 Servings
1/3 lb Broccoli
2/3 cup Chicken -- cooked and sliced
2/3 can Cream of chicken soup
3 tbsp Mayonnaise -- scant
1 tsp Lemon juice
1/8 tsp Curry powder
3 tbsp Cheddar cheese -- shredded
3 tbsp Soft bread crumbs
1 tsp Margarine -- melted

  • Cook broccoli & arrange in a dish
  • Place chicken on top.
  • Combine soup, lemon, mayonnaise, curry powder, juice, and pour over chicken and broccoli.
  • Sprinkel with combined bread crubs, butter and cheese.
  • Bake at 350 deg F for 25 to 30 mins.

4 large flour tortillas, 98% fat free
1 1/2 cup shredded cheddar cheese, nonfat
6 oz cooked chicken breast halves
1/2 tbsp chipotle hot sauce

  • Preheat a large frying brush the surface with olive oil.
  • Warm the tortillas, 1 at a time, on both sides
  • Return 1 tortilla to the pan, spread a quarter of the cheese over it, and scatter a quarter of the chicken over the cheese.
  • Add a dash of hot sauce, and top with another tortilla.
  • Cook until the chees is nearly completely melted, about 4 mins, turn, and cook for 2 mins more.
  • Transfer to work surface, and cook the remaining quesadillas in the same manner.

  • Add the fettuccine & the fresh spinach to boiling water together & cook for 10 mins drain
  • Toss the salt, garlic, heavy cream & parmesan cheese
  • mix well & serve

3. 1 1/2  Italian bread crumbs
4. 3/4 cup sour cream

  1. Heat oven 350 degrees F.
  2. Pound chicken thin arrange chicken into baking dish.
  3. Season to taste with pepper/salt.
  4. Mix sour cream & cheese.
  5. Spread mixture on to chicken.
  6. Sprinkle bread crumbs on top
  7. Bake 30 mins up to chicken is cooked through & bread crumbs are golden brown.
  8. For darken top, you can broil top as needed.
