Ingredients:
1. 28 oz. Tomatoes
2. 13 oz. Tomato sauce
3. 1 tbsp Sugar
4. 1 pound Sweet Italian Sausage
5. 1/2 cup Onion
6. 4 cloves Garlic
7. 1 1/2 tsp Basil leaves
8. 1/2 tsp Fennel seeds
9. 1 tsp Italian seasoning
10. 1/2 tbsp Salt
11. 4 Eggs
12. 1 1/2 pounds Mozzarella
13. 3 oz. Mozzarella
14. 3/4 cup Parmesan cheese
15. 1/4 tsp Black pepper
16. 12 noodles Lasagna Noodles
17. 16 oz. Ricotta cheese
18. 4 oz. Mushrooms

14. 3/4 cup Parmesan cheese
15. 1/4 tsp Black pepper
16. 12 noodles Lasagna Noodles
17. 16 oz. Ricotta cheese
18. 4 oz. Mushrooms
Directions:
- In a Dutch oven cook garlic, onion, & mushrooms over medium heat to browned.
- Once the garlic,onions & mushrooms are browned, mix in and cook the sausage up to browned.
- Toss crushed tomatoes & tomato sauce.
- Season with 1.5 teaspoons freshly chopped basil, 1 tablespoon sugar, 1 teaspoon Italian seasoning, 1/2 teaspoon fennel seeds, 1/4 teaspoon black pepper, 1/2 tablespoon salt, & 2 tablespoons parsley (optional).
- Simmer covered, for about 90 mins, stirring occasionally.
- Bring a pot of lightly salted water to a boil.
- Cook lasagna noodles in boiling water for 8 up to 10 mins.
- Drain noodles, & rinse with cold water. (or cook using hot water in a pan, which is much easier)
- In a mixing bowl, combine ricotta eggs, cheese, remaining parsley (optional), & 1/2 teaspoon salt.
- Heat oven 357° F.
- To assemble, spread 1.5 cups of meat sauce in the bottom of a 9x13 inch baking dish.
- Arrange 6 noodles lengthwise over meat sauce.
- Spread with one half of the ricotta cheese mixture.
- Top with a third of mozzarella cheese slices.
- Spoon 1.5 cups meat sauce over mozzarella, and sprinkle with 1/4 cup Parmesan cheese.
- Add remaining 6 lasagna noodles lengthwise over meat sauce.
- Cover with remainder of ricotta cheese mixture, one third of mozzarella cheese slices, then the remainder of the meat sauce, & then top with remaining one third mozzarella cheese slices and Parmesan cheese.
- Add extra shredded mozzarella cheese to put this dish way over the top.
- Cover with foil.
- To prevent sticking, either spray foil with cooking spray, or make sure the foil does not touch the cheese.
- Bake in preheated oven for 25 mins.
- Remove foil, & bake an additional 20 mins (don't overheat!).
- Cool for 15 mins before pigging out!
