Healthy Recipe; Grilled Beef, Chicken, Shrimp, and Moshroom SkewersIngrediebts:
2 tsp salt.
2 tbsp fresh lemon juice.
1/2 tsp black pepper.
4 large garlic cloves.
1/3 cup  olive oil.
1 lb moshrooms, trimmed and halved through stem if large.
1 lb sirolin steak (1 inch thick), trimmed of exess fat.
2 medium skinless boneless chicken breast halves (1 lb total).
1 1/4 lb medium shirp in shell (31 up to 35 per lb; about 40), peeled and devined.

Directions:

Step 1
  • Minced garlic & mash to a paste with salt using a large heavy knife.
  • Transfer to a small bowl & whisk in lemon juice & pepper, then add oil ini stream, whisking until emulsified.
  •  Devide marinede among 4 (1 up to 2 quart) bowls
Step 2
  • Cut steak into 20 up to 25 (1/4 inch thick) slices, then stir with marinade in one of large bowl & thread each slice lengthwise into a skewer
Step 3
  • Cut chicken breast halves diagonally into 20 up to 25 slices.(about 4 inches long & 1 inch wide ; if breast are thin, hol knife at a 45 degrees angel to get  1-inch-wide slice).
  • Stir white marinade in another bowl & thread each slice lengthwise into a skewer.
Step 4
  • Stir shirmo with marinade in another bowl, then thread 2 shrimp into each 0f 20 up to 25 skewers.
Step 5
  • Stir mushrooms with marinade in remaining bowl & thread 2 small mushroom or 2 large halves into each 20 up to 25 skewers.
Step 6
  • Prepare grill for cooking over hot charcoal (high heat for gas).
Step 7
  • Grill skewers in batches on lightly oiled grill rack, covered only if using a gas grill, turning over once with tongs, until beef is medium-rare, about 3 mins total, shrimp is just cooked through,about 2 mins, chicken is just cooked through,about 3 mins, and mushrooms are tender, about 4 mins
Step 8
  • If using a charcoal grill, open vents on bottom of grill, then light charcoal. 
  • When charcoal turns grayish white (about 15 mins from lighting), hold your 5 inches obove grill rack to determine heat for charcoal as follows:
Step 9
  • Low: When you can hold your hand there for 5-6 sec.
  • Medium hot: 3-4 sec.
  • Hot: 1 to 2 secs.
Step 10
  • If using a gas grill, heat burners on high, covered, 10 mins, then, if necassary, reduce to preheat specified in recipe.
