  • Preheat a large frying brush the surface with olive oil.
  • Warm the tortillas, 1 at a time, on both sides
  • Return 1 tortilla to the pan, spread a quarter of the cheese over it, and scatter a quarter of the chicken over the cheese.
  • Add a dash of hot sauce, and top with another tortilla.
  • Cook until the chees is nearly completely melted, about 4 mins, turn, and cook for 2 mins more.
  • Transfer to work surface, and cook the remaining quesadillas in the same manner.

1 cup shredded cheese
2  9 oz can chicken

8  8 inch flour tortillas

  • Heat tortillas in pan, this will make them easy to fold.
  • Spread 1 tbsp sour cream on each tortilla.
  • Spread 1/8 of chicken on half tortilla.
  • Top with salsa (optional).
  • Top white cheese.
  • Fold over, preheat on medium for 3 mins.
  • Flip over, preheat for additional 3 mins until cheese is melted.
  • Cut into halfs or thirds.
  • Serve immediately while hot.

2 tsp Tabasco Sauce

  • Heat oil up to 335 deg F in a Deep skillet or Deep Fryer.
  • Properly clean & wash chicken then pat dry.
  • Sprinkle with pepper & salt on both side, aside.
  • Combine milk, eggs & tabasco in a separate med bowl, wisk together.
  • Add chicken to flour mixture one at a time coating both side, shake off excess flour.
  • Dredge Each piece in egg mixture.
  • Add chicken back to flour mixture cover bowl & shake to coat.
  • Shake off excess flour.
  • Lay chicken in heat oil.
  • Cook for approx 7 minutes on one side, Pierce with knife tip to vent chicken flip & cook for approx 5 mins.
  • Pierce in center, make sure juices run clear (No blood).

2. 5 cup Sugar
3. 1/4 tsp Allspice
4. 4 cup Chopped cored & peeled pears

  • In large kettle pectin & pears, stir well. 
  • Cook over medium heat until mixture starts to boil, stirring constantly. 
  • Add spices  & sugar. 
  • Bring mixture to a boil once again, stirring constantly. 
  • Boil 1 mins & remove from heat. 
  • Ladle mixture into hot jam jars, cap & processing in boiling water bath for 10 mins. 
  • Jars will create a seal when they start to cool. Enjoy!

2 tbsp fresh lemon juice.
1/2 tsp black pepper.
4 large garlic cloves.
1/3 cup  olive oil.
1 lb moshrooms, trimmed and halved through stem if large.
1 lb sirolin steak (1 inch thick), trimmed of exess fat.
2 medium skinless boneless chicken breast halves (1 lb total).
1 1/4 lb medium shirp in shell (31 up to 35 per lb; about 40), peeled and devined.


Step 1
  • Minced garlic & mash to a paste with salt using a large heavy knife.
  • Transfer to a small bowl & whisk in lemon juice & pepper, then add oil ini stream, whisking until emulsified.
  •  Devide marinede among 4 (1 up to 2 quart) bowls
Step 2
  • Cut steak into 20 up to 25 (1/4 inch thick) slices, then stir with marinade in one of large bowl & thread each slice lengthwise into a skewer
Step 3
  • Cut chicken breast halves diagonally into 20 up to 25 slices.(about 4 inches long & 1 inch wide ; if breast are thin, hol knife at a 45 degrees angel to get  1-inch-wide slice).
  • Stir white marinade in another bowl & thread each slice lengthwise into a skewer.

  • Stir shirmo with marinade in another bowl, then thread 2 shrimp into each 0f 20 up to 25 skewers.
Step 5
  • Stir mushrooms with marinade in remaining bowl & thread 2 small mushroom or 2 large halves into each 20 up to 25 skewers.

  • Prepare grill for cooking over hot charcoal (high heat for gas).

  • Grill skewers in batches on lightly oiled grill rack, covered only if using a gas grill, turning over once with tongs, until beef is medium-rare, about 3 mins total, shrimp is just cooked through,about 2 mins, chicken is just cooked through,about 3 mins, and mushrooms are tender, about 4 mins

  • If using a charcoal grill, open vents on bottom of grill, then light charcoal. 
  • When charcoal turns grayish white (about 15 mins from lighting), hold your 5 inches obove grill rack to determine heat for charcoal as follows:

1 whole egg
1 tablespoon mayo
1/4 teaspoon Old Bay Seasoning
2 c zucchini
1 teaspoon dijon mustard

  • Heat oven up to 350 degrees F. 
  • Prepared baking sheet with parchment paper. 
  • Spray parchment paper with olive oil cooking spray or brush with olive oil.

  • In a big bowl combine , bread crumbs, grated zucchini, mayo, egg, Old Bay & mustard. 
  • Mix well.
  • Form mixture into 8 cakes about 1/2 inch thick. 
  • Bake cakes in oven for 40 mins flipping cakes after first 20 mins.

1. 2 c Confectioners Sugar
2. 8 oz. Cream cheese
3. 0.5 tsp Ground ginger

  • It is very important to make sure your cream cheese is completely softened before starting this recipe.
  •  In an electric mixer, beat the softened sugar & cream cheese.
  •  Afterwards add  ginger, pumpkin & cinnamon. 
  • Scrape down bowl to ensure all ingredients are mixed thoroughly. 
  • Mix 1 more min to mix completely. 
  • Serve in a small bowl with apple slices, pear slices or/and ginger snap cookies for dipping.

8. 8 ounces shredded cheddar cheese

  • Combine all ingredients in the stoneware crock pot. 
  • Cover cook on Low 2-2 30 mins, stirring once or twice, up to cheese is melted & smooth.

Best Dips and Spreads; Carrot Cashew Spread


1. 15 dried apricots
2. 1 c raw cashew
3. 3 carrots


  • Put carrots into a pot & cover by 2 inches with water.
  • Bring to a medium boil, reduce heat to medium-low, cover & simmer until tender, about 10 mins.
  • Add 3/4 c cashews & apricots, cover & continue to simmer until carrots are very soft, 5 to 7 mins more; reserve 1/2 c of the cooking water, & then drain well.
  • Transfer carrot mixture & reserved water to a food processor & purée until smooth.
  • Chill for at least 60 mins, then garnish with remaining cashews & serve.

Easy Holiday Dips and Spreads; Caramelized French Onion Dip


1. 1 cup onion
2. 1 clove garlic
3. 1 tablespoon olive oil
4. 1/2 cup mayonnaise
5. 1/4 teaspoon white pepper
6. 1/2 cup sour cream
7. 1/2 teaspoon Worcestershire sauce
8. 1/4 teaspoon kosher salt


  • Preheat olive oil in a small pan over medium-low heat.
  • Add garlic & onion & cook until they turn brown in color, stirring occasionally, about 20 mins.
  • Take care not to burn the onions. Remove from heat & allow to cool.
  • In a large bowl combine cooled onion, pepper, sour cream, salt, Worcestershire sauce & mayonnaise.
  • Chill 30 mins.

Appertizer Recipe: Prosciutto & Wraps with Fresh Goat Cheese


2 tablespoons. Fig jell
4 oz. Goat Cheese
6 slices Prosciutto


Step 1
  • Place thin sliced   prosciutto side by side, overlapping little on a sheet of parchment paper.
Step 2
  • Spread fig jell over the entire length of the sliced prosciutto. 
Step 3
  • Cut the Fresh Goat Cheese Log lengthways into four pieces.
Step 4
  • Place the pieces of Goat Cheese Log on the fig jell.
Step 5
  • Roll the prosciutto around the Goat Cheese Log & place in the refrigerator for 60 minutes.
Step 6
  • With a very sharp knife cut the prepared log into ½ inch pieces & arrange on a serving platter.

1 c Flour
1/2 pound sharp cheddar
1 stick margarine or butter
1 jar green olives
1 teaspoon cayenne

2. 2 tsp Worcestershire sauce
3. 2 cups Sharp Cheddar Cheese
4. 1 tsp Onion flakes

7. 1/8 tsp Salt

Step 1
Measure first 7 ingredients into a bowl. Mash and mix together (mush together by hand is easiest).

Roll in nuts, wrap in saran wrap and chill until firm. Refine ball shape after chilled while still in wrap.

  • Put cocktail knives and crackers nearby so guests can dig in.
  • Leftovers can be reshaped and rewrapped.

  • Substitute Cayenne pepper for Black pepper.
  • Add 1 tablespoon. chopped green pepper and 1 tablespoon. chopped pimento.
  • Divide into 2 smaller balls and add peppers/pimento to one before rolling in nuts.

  • Brush with olive oil.

  • Spread 1 sheet phyllo on flat work surface; brush evenly with melted butter.

  • Place a second sheet of phyllo on top; brush with melted butter.

  • Place third sheet of phyllo on top of 2 sheets; brush with melted butter.

3. 4 ounces crumbled blue cheese

4. 1 medium onion, finely chopped

5. 1  apple, peeled and finely chopped

6. 1.9 ounces frozen miniature phyllo tart shell  

7. 4 tbs finely Diamond of California Chopped Walnuts, toasted, divided 


Step 1 

In a small nonstick skillet, saute onion and apple  in butter until tender. Remove from the heat; stir in the blue cheese, 3 tbs walnuts and salt. Spoon a rounded tbs into each tart shell

Step 2

Place on an ungreased gun metal. Bake at 350 degree for 5 min. Sprinkle with remaining walnuts; bake 2-3 min longer or until lightly browned. Yield: 15 appetizers.
