Quick and Easy Mexican Recipe: Enchilada Casserole

Ingredients:
(c=cup)
1. 1 can (12 ounces) Cream of mushroom soup
2. 2 c Cheddar & jack cheese
3. 2 4-ounces can Green Chilies
4. 12 ea Corn tortillas
5. 1 12-ounces can Cream of Chicken Soup
6. 1 1/2 lbs Hamburger
7. 1 ea White Onion
8. 2 12-ounces cans Enchilada Sauce
Directions:
  • Brown hamburger and onion. 
  • Pour off fat. Cut tortillas into 1" squares and mix with all the other ingredients except cheese in a big bowl.
  •  Add drained hamburger. 
  • Mix & pour into a 9x13 glass casserole. Spread cheese evenly over mixture. 
  • Bake covered at 375 degrees F for 60  mins. 
  • Serve with Salsa & Sour cream.
